Pumpkin Spice Almond Milk

Ingredients

  • 1/4 tsp vanilla extract
  • 1/2 tsp pumpkin spice
  • 1/2 cup roasted pumpkin
  • 11/2 cup almond milk
  • 3 medjool dates

Instructions

  1. Put the pumpkin, dates and spice into the blender. 

  2. Pour the measured almond milk into the blender. 

  3. Choose the smoothie setting, and the blender to do the job. 

  4. Pour the mixture into a saucepan and heat up to your desired temperature. 

Recipe Notes

* I love to use roasted pumpkin or sweet potato in my recipe. The sweetness comes out even more when you toast them. 

** I always love to soak my date for at least 20 min before putting into the blender. Use the water too. 

*** If you do not have pumpkin spice, you can make your own by mixing 1/8 tsp clove, 1/4 tsp of ground nutmeg, 1/4 tsp of ground ginger, and 1/2 tsp ground cinnamon 

I don’t know what part of the country or the world you are in, but guess what, winter has already started here in Michigan two weeks ago. We have had some light frost during the nights, and even HAIL last weekend. Growing up in Nanjing, a city with pretty mild winter, and staying in Atlanta for the past three years, it took me a while to adjust in Michigan and change my setting to winter mode earlier than ever. And the real winter (立冬) is still a week from now according to Chinese Lunar calendar (农历).

Winter mode means putting on layers of layers of clothes, cooking a whole pot of warm soup , making a cup of warm drink, and baking potatoes, sweet potatoes or pumpkin EVERYDAY!!! Here, I am not joking, those have all become part of my daily routine and, somehow, I’m falling in love with early winter here and I can’t wait till the real winter comes. Surely I have no control of the outside, but I can take complete control of what’s inside my house, my body… and my soul.

When you buy a case of pumpkins(hopefully you are not as crazy as me), you want to find every single way you can to use them up before they go bad. The other night after dinner I was still hungry, which was very rare to me as I almost never do dessert or have a snack after dinner. I guess sometimes we should just allow ourselves to things that feel good to us at the moment… It is ok to reward ourselves from time to time.

Anyways, that’s how this easy, quick, healthy and warm drink was created. The left-over roasted pumpkin, home-made almond milk, two medjool dates and pumpkin spice made up the whole ingredient list.
